Maple-Cinnamon Oatmeal Waffles

This five-ingredient recipe is a fun variation on your morning bowl of oats, and it's a simple breakfast meal to create with your kids. If you can resist peeking while these waffles cook, you'll be rewarded with crisp, lacy, gently sweet morning treats that are delicious hot or cold. Extra maple syrup, your favourite berries, and a dollop of aquafaba whipped cream on top of each waffle for good measure!

Serving Size: make 4 waffles

Prep Time: 10 mins

Cook Time: 30 mins

INGREDIENTS:

11/4 cups quick oats

1/2 cup raisins

1 tsp ground cinnamon

2 tbsp pure maple syrup, plus more for serving

Fresh berries and/or sliced banana

Direction:

1- 1 cup quick oats, cooked according to package directions Stir in the remaining 14 cup oats, raisins, 2 tablespoons maple syrup, and cinnamon while the mixture is still hot. Allow to stand for 15 minutes, uncovered, or refrigerate overnight.

2- If a medium-high setting is available, preheat the waffle maker according to the manufacturer's instructions. Using the back of a fork, spread oatmeal in waffle maker. Cook for 10 to 15 minutes without opening the lid, or until almost no steam comes out of the maker. Fresh berries and/or banana, as well as more maple syrup, can be added to the top.
