Blueberry Banana Bars

This delicious bar is ideal for breakfast, snacking, or dessert. It's high in starch, which provides long-lasting energy, and unprocessed sugars, which provide a healthful sweetness. You may enjoy a tasty pleasure while also benefiting your health!


Serving Size: Make 12 Bars

Prep Time: 15 mins

Cook Time: 45 mins


Ingredients:


1 cup Fresh Blueberries

1 cup Dates

1 large Ripe Bananas

1 1/2 cups Apple Juice

3 cups Rolled Oats

1/2 cup Walnuts

3/4 tsp Ground Cinnamon

1/4 tsp Ground Nutmeg

1 1/2 tbsp Baking Powder

1 tsp Vanilla Extract


Direction:


1- Soak the dates in the apple juice for 10 to 15 minutes in a small bowl. Preheat the oven to 375 degrees Fahrenheit. Make sure the edges of a 9x9-inch baking pan are covered with parchment paper. Cut slits in the paper's corners so that it overlaps and lays flat.

2- In a medium bowl, combine 2 cups of the rolled oats with the cinnamon, nutmeg, and baking powder. Mix and set aside.

3- In a blender, combine the remaining 1 cup of rolled oats, the bananas, and the vanilla extract. Set the dates aside after removing them from the apple juice. Strain the juice and puree it in a blender until smooth.

4- Add the dates to the blender, and pulse a few times until the dates are in small pieces.

5- Pour the banana mixture into the dry ingredient bowl. Mix well. Stir in the blueberries and walnuts.

6- Pour the batter into the baking pan with a spatula. 30–35 minutes in the oven, or until a toothpick inserted in the centre comes out clean.

7- Cool at room temperature for 5 to 10 minutes before cutting and serving.
